On 22 October 2021, a research associate of the museum and educational department of Bolgar Museum-Reserve R. Z. Vagapov within the project “Pushkin’s card” held an interactive museum lesson on “National cuisine is a mirror of history” for the students of Spassky College of sectoral technology.
Culinary arts of peoples are rich in their national and cultural traditions going back to antiquity. During a centuries-old history, original national cuisines appeared. They preserved their particular characteristics to the present day. At the lesson, the participants knew how historical stages of the development of Volga Bulgars affected the gastronomic culture of the Volga Tatars. In the first centuries of our era, Bolgar tribes were the bright representatives of steppe culture. Kids learned what dishes of Tatar national cuisine are connected with this stage of history – shurpa, baursak, kazylyk and others.
The second part of the lesson was a master class “Bal-mai”. The participants became acquainted with the history of emergence of this dish, knew about the useful properties of honey, butter and, of course, of “bal-mai”. Kids became familiar with the recipe of preparation and the tradition of serving this ancient dish of Tatar cuisine.
